I already have a decent (for when I built it 3 years ago) gaming pc here are my current specs

ryzen 5800x
rtx 3060ti
16gb ddr4 3200 mhz ram
asus b550 pro art motherboard
850 80+ gold psu
dell 32" 4k 144hz hdr monitor 

However my pc is struggling to run games smoothly at 4k, or at all, I end up just running them mostly at 2k and using NIS or just what ever in game render option to get higher fps with it still looking nice, but even now im having to run modern titles at low to medium settings, having any kind of ray tracing on is a complete no no in terms of performance that is playable

Im wondering if I would be better going from my 3060ti to a 5080 or instead of upgrading my gpu, get a full ddr5 platform upgrade instead.

Upgrading the gpu is certainly the easier option as its fairly plug and play upgrade, where as the platform upgrade means rebuiling my whole pc bassically, and I dont feel like my cpu is much of a bottle neck for what I do day to day in terms of music production or for the games I play.

on the games i played over the years, what i found out was, it seems if you wanna play everything maxed out, usually gpus are a couple of years behind cpus,for example, my main pc has intel 13600k with ddr5 7200 cl34 32gb, z790 msi tomahawk, and 3090, first i never saw cpu usage over 20 30 percent even on the most cpu intensive games like cyberpunk,  and even lower usage on other games, and rarely saw ram usage over 10gb, while when i bought this pc 3090 was the fastest gpu on the market, also i only play everything maxed out at 1080p, and based on what i saw i bellieve not even 5090 gonna bottleneck on my pc, that is why i sold the 3090 and waiting for a 5090 to get available, another example, i have a second pc just for experimenting and playing which is socket 1366 which i bellieve came to market around 2010 and with a rx 580 which came out 2017, still i am gpu bottle neck on 1080p everything maxed out on games like god of war, forza 5 etc, but the point is ddr5 is getting widely available now, you might get more if you sell your pc as is and build a new one, but if you wait a couple of years, you might not be able to sell it for a good price, when the time comes for an upgrade, in the other hand definitely if you buy a good gpu for now it might be cheaper but in long run you might not gonna be able to sell your pc for a good price when you want to upgrade, also most likely your psu doesnt have this nvidia new stupid 12v connector and based what i heard, which i can not confirm, older psus strugle with 40 and 50 serries even if they meet the minimom regurement of the gpu, because momenterely 40 and 50 serries gpus can pull too much power, much higher than the rating nvidia says and trigger over current protection on psus and makes you to change the psu as well plus it is even posible this over current protection damage some of the parts or the psu, also with 1200 pound i dont bellieve you can build a decent pc, the best option i think is sell your pc, i dont know how much you can get for your pc but if you can sell it for a good price, you can with that money and your 1200 pound build a new pc which gonna last for longer for you, or change gpu and psu at the same time, better to be safe than sorry

building a pc is like choosing a wife, you can build something ugly on the outside but beautiful inside, or you can have something beautiful from outside with no brain, if you be lucky you can build a pc with amazing look inside and out if you have the money, and if you have crappy luck with no money you can end up with an ugly slow pc, so it seems it all comes to what you worth for yourself to spend on what you want to spend time with, if you are confused dont worry i am confused too
