First NAS Help

Over the past few months I've been wanting to get a NAS, mainly for file storage, some plex usage, (never more than 2-3 streams at once) and run a Minecraft server or Ark Survival Ascended server. I may or may not have jumped the gun and bought a refurbished Optiplex 7070(i5-9500 16GB RAM 512 GB SSD Windows 10) off of eBay and have been playing around with it. I just purchased a pair of 12tb drives that get delivered Monday. I plan to run one as redundant for a total of 12tb to store files and my Plex server on. My main question and where I need some help due to me being new to everything server related or NAS related, is the os. It came with windows 10 on it, I'm able to update to windows 11, but what I want to know for my use case is it worth getting UNRAID? Or TrueNas? Just looking at unraid the docker community apps are appealing because it doesn't require much configuration as it would if I ran any other os(correct me if I'm wrong) I mainly want simplicity due to lack of experience. Let me know if any help or questions you might have.
