My Fortnite FPS has started to feel low, averaging 110 to 120 FPS on medium settings (epic view distance) at 1440p. for the parts below, is this normal? other games like CS2 and war thunder run at 165 to 200 FPS at max settings, and games like stray, red dead redemption 2, far cry 6, far cry 5, run at around 150 at 1440p max settings as well.

 AMD Ryzen 7 5700X

ASRock B550 Phantom

 G.Skill Ripjaws V 32 GB (2 x 16 GB) DDR4-3200

 Samsung 970 Evo Plus 1 TB M.2-2280

ASRock Challenger D Radeon RX 6600 8 GB

 Corsair RM750e (2023) 750 W 80+ Gold

While I am no expert, it looks like that 8GB of VRAM might be a culprit. Maybe due to a recent update? I can't say for sure.

Things you could try are

-Looking at the Performance tab in task manager to see if any one component is bottlenecking another

-Using tools like HWiNFO64(Hardware Info 64), and GPU-z/CPU-z

-Could look around on the internet to see if anyone else is having similar issues(to see if it was a Fortnite update[make sure the posts are recent])
