I never had a HDD die suddenly without giving warnings and allowing to save data. Have you?

No. The only drives I've had fail on me was an old quantum fireball cx, and a wd2500jb (although I've bought a ton of already dead drives from ebay). Both of them gave plenty of warnings before they finally stopped working. Realistically, a few bad sectors doesn't increase the likelihood of the drive suddenly dying too much, but it is something to be aware of. I've used drives with bad sectors for years, without any problems. But for other drives, it could be a warning sign of the drives imminent death, especially if they are increasing regularly over time.

I have a few of these Barracudas that came in USB2 enclosures of a different brand, but worked well for years. Too bad Seagate switched to SMR for the newer models. I think Ironwolfs are CMR, but only 5400RPM and NAS that I don't need and I prefer to avoid.

There is the seagate firecuda drives, which are 7200rpm and cmr. Although they're a bit harder to find.

I never saw Seagate Firecuda hard disk drives advertised, but Exos 7E10 seem to be available. How good are these?

Those are good too. They're also using 2 tb cmr platters, just like the firecuda drives are. They seem to be using the same hda as well:

What is the difference between standard and 512E/4KN (for example ST8000NM017B and ST8000NM000A)?

St8000nm017b is exos 7e10, while the st8000nm000a is 7e8. The 7e10 is using 2tb platters, while 7e8 is using older and slightly slower 1.6tb platters.

And what is the difference between 512E/4KN (ST8000NM017B) and 4KN (ST8000NM002B)? I read the one uses 512 and the other 4096 Bytes per Sector, but what does this really mean in practice?

Both use 4k sectors, 512e means it appears to the host as a standard 512 byte per sector drive. 4kn drives might not be compatible with older systems.

Does this mean that a HDD using 512E/4KN is compatible with older systems?

Yes, anything with 512E or 512N on sata will work.
As for the HDD’s the 2TB platters from seagate should be SMR, so I would avoid them if you can.
but from my serach, both 7e8 and 7e10 are CMR, can somebody confirm this?

"Recording method: perpendicular" on pange 9 and 11. Seagate also makes 2tb platters in cmr as well, they're also used in other drives like seagate firecuda.
