You actually have room in the budget for the 5700X3D. This is much better gaming CPU than the 5800x 🙂
Rest looks good.

Maybe paying a bit too much for the motherboard.

This is a decent build with good components and 'futureproof'' enough CPU and PSU to upgrade the Graphics Card later to something better than the 580.

No, you won't need any adapters or anything else to build and use this system.
You will need a WIFI adapter/card if you plan on using wireless internet. 
You can also get a motherboard with WIFI if you want.

I am not familiar with the used market in the US ( I'm from Norway ).  The RX 580 8GB is still actually quite a decent GPU for 1080p gaming 🙂

I think you can find one for cheaper than $120 used.
