Typically this error is GPU related, most of the time it's just software. If your signature is up to date and you're running a 5600XT it's likely the driver. AMD cards in recent years have had driver issues pretty consistently. I'd use DDU to uninstall your current drivers then reinstall using AMD Adrenaline(if you are using the windows updater to get your drivers that could be your issue as it can get out of date or improper drivers), if you are already running the most up to date driver Adrenaline grabs then try manually installing the previous driver release not the newest one. If you are still having the same problem with the current driver as well as an older driver release, the Vram on your GPU may be bad, which unfortunately would require the GPU to be RMA'd or replaced.

There is also a slim chance it could be your display cable. A faulty display cable can cause the GPU to green screen crash. So you could also try using a different display cable as well.

I already tried DDU but it didn't seem to solve it. I did hear about people having trouble with AMD drivers so I might install older ones and see if that works. Though I'd really like to figure out the cause just in case it's hardware related. This all started once I upgraded my CPU and reinstalled Windows so I do wonder if newer installs have something that's causing conflict? The error that keeps popping up in event viewer is the EnhancedStorage-EhStorTcg which apparently is related to Crucial drives? I updated its firmware just in case but yesterday it rebooted with no green screen. This was with a new DisplayPort cable. I was using HDMI before and used two different ones.

If you have tried cables, and DDU with a fresh install of the current driver, I'd do DDU again and try one or two older driver versions. If it's still happening after that, unfortunately, it's likely the GPU itself. Usually green screen crashes are only GPU related. I don't think it's going to be related to the CPU or your storage drive(just in case you could try reseating the CPU, however, I don't think you need to). A good test to know if it's the hardware would also be to move your GPU to another working system if you have easy access to one that will work with it. If you slap it into another system and it has the same issue it's going to be the card itself.

Yeah I don't have any spares to try out unfortunately. I might have to just take it to a shop
