Just wondering if it is possible to clone all my data and windows 11 install and everything from my 500gb m.2 to a new 1tb m.2 ?

Yes, it's possible. There's tons of pieces of software designed to do just this, from ones that run inside Windows like Macron Reflect to ones that run off flash drives like Clonezilla. 

 

Personally, I've had the best luck with Clonezilla, so that would be my recommendation (especially since it's free).
