Is there much point in 1080p 144hz monitors when the 7800xt is a lot more capable than that? Maybe a 1440p 144hz monitor would be better for the gpu?

Very ambiguous. Cyberpunk at 1080p with all the raytracing settings on I'd still recommend a 7800XT. If they're only planning on playing Minecraft then a 7700XT would be enough. If ray traced Minecraft then something stronger again. 7800XT is just a safe recommendation.

That being said, if you find that 1440p monitor for 200eur, it's good as you can then buy still a decent cooler and be underbudget, cheapest the site lists me is 250eur for 144hz IPS. 7eur over but worth it, can be trimmed:

Did you get into a racket and get forced to buy this 120% of MSRP? H5 Flow is so not worth it for the MSRP price, let alone at this price..

KC3K is a decent SSD but 2TB is absolutely a must in this budget really. Running out of storage sucks.

Another "not worth it" parts here. Flare X5 at the same price range triumphs Corsair line in stability for EXPO operation.
