Which GPU for this system?

As a NVidia fanboi get a 4070 ($550), it's a good 1440p card (performance comparable to a 3080, with better efficiency and thermals) 

On AMD side you can save some money with a 7800XT ($450), which is also a bit faster except in RT

Do you do anything other than games?

I intend to utilize the PC primarily for gaming, as well as engaging in minor video editing tasks. With regard to my display preferences, I am going for a monitor with a resolution of 1440p and a refresh rate of 170Hz.

I hate being that guy, but if productivity is a important point, Nvidia cards are plane better at that still. You can use amd cards and if budget is a concern you will get more bang for your buck with AMD. If you can get it for 600 bucks, a RX 6950xt is a monster of a card with a lot of vram 16gb. It will crush 1440p with ease. Have one myself and it slaps, but I don’t do productivity.
