This might sound dumb but i'm wanting to go from 2 2TB HDD to just 1 4TB SSD.

For simplicity yea sata would be the game plan because my HDD are on hot swap sleds.

4TB SATA, yeah that's about as cheap as it gets. The old standby SATA SSD that's real solid is the MX500 but its over $200.
