I an upgrading my current computer which has a core i7 7800k, 16gb ddr4 3600 ram, and a Rog 3060 v2 graphics card. I am selling my current computer with everything but the graphics card which I am going to use in my new build. 
Budget (including currency):  1200 USD But this doesn’t include the graphics card since I already own it.

Games, programs or workloads that it will be used for: I will be used mostly for gaming some video editing and some light coding. I have a 1440p 165 hrtz monitor.

tbh for 1440p gaming and light coding the 13600kf would be enough. Good way to save money.

With a slight bit of tweaking to your list a brand new 6700xt would be able to just about be out of budget.

Build this, sell the 3060 ti you should be able to get $100 for it, that makes your budget $1300, then build this. The 6700xt performs much better than the 3060 ti is most games at 1440p.
