Are you going to rely on the stored energy for the entire duration of the trip, with only solar as your source?
assuming so, just some realistic numbers here. 
if you want to heavily use your phone the whole trip, aka watch videos or game the entire time, you are going to need 300wh of energy in total assuming you want to leave with a full phone battery, 30wh a day or roughly 1.5 phone charges. 
If you just want to use the mobile sparingly, only for map use or whatnot, I think you can get by with 100wh or less. 

If you are going the sparingly route, I would get two power banks rated at 25,000mah from a reputable brand, and if you have time, test at least one to see how many charges you get from it. 

if you are going to heavily use it route,  I would get one power bank and a 15w foldable solar panel. Keep in mind you will need ~3-5 hours of cloudy imperfect daytime if the bank is completely dry, or ~2.5 if perfect clear skys, so if that is a problem, just go with a bigger panel size.

fair warning here that a lot of the cheap solar battery banks dont actually *charge* off the solar panel, either because it's just straight up not wired into the charging circuitry, or because the solar panel isnt powerful enough to push any charge into the battery.

I'd suggest keeping the solar panels and the battery as separate devices. Heat isn't good for batteries and most say to keep them out of direct sunlight. The ones with a single panel on the side are a scam (no way they can generate enough power to charge themselves). The ones with multiple panels that fold out... probably still not the best idea. Probably something like this https://www.amazon.com/ELECAENTA-Portable-PowerPort-Compatible-Backpacking/dp/B09987SG7F/ plus one or two regular power banks. If you're going to be returning to the same campsite each night (or at least not changing campsites very often), I'd lean towards 2 power banks, so you can leave 1 with the panel at the campsite to charge during the day, and carry the other one with you. Then, swap the one you're charging for the one you're carrying each morning or as needed.
