I currently have a corsair power supply with 750 watts. (One 8 pin CPU connector)

My system is 

12700k Gigabyte Aorus Elite AX DDR4

Amd 6750xt

 

If I want to overclock, do I need the 8 + 4 CPU connector that is on the motherboard?

If I do need to get a new PSU for that reason, is 750 enough or should I go ahead and get an 850 or higher?

Not really no, the 1x8pin EPS connector can safely supply up 235w of power but the high end PSU's have that EPS cable rated for 336w.
You can overclock with 1x8pin EPS CPU connector. The 12700k is a high wattage chip so you might be power limited if you go hard on the overclock, only one way to find out!  If you plan on getting a new PSU then 850w is usually the same price as 750w's.

Well exactly as @Hinjima says, more headroom. But honest to god, Alder Lake and Raptor Lake is nightmare and a half to even hit silicon limit on conventional cooling, those extra plug really only helps when you go esoteric with subambient cooling.
