It's kind of annoying that menus keep getting tinkered with as any time I look for a YT tutorial for anything older than a year, the settings path doesn't match the device I'm using. 
I have a Pixel 3cxl. I haven't upgraded yet as it works fine for my needs. 
The back camera is supposed to be 12.2 megapixels. Some megapixel to resolution conversion site I used said that is supposed to be 4272 x 2848 pixels. 
But my photos from the Pixel 3 are only 3840 x 2160.
I believe the camera resolution options for the Pixel 3 used to give about five or six different resolution/aspect ratio options. But now all I get is a choice between 'Full resolution' or 'Medium resolution'. 
As of May 2023, I can't find any other options for the phone's camera resolution. 
Does anyone know how I can change the phone camera pictures aspect ration capture so I can up the resolution to 4272 x 2848?

I assume some update simplified the settings. My P6pro camera resolution gives me only medium and full as well. 

 

TBH, how many settings do you need? Pics don't take much room.  Either do the max, or do medium if space is an issue. 9 out of 10 people probably never change that setting and more options would just confuse them. Without knowing details, people would just set the highest resolution.

 

It's different for videos where space really is an issue and a user may experiment more to find the best balance. But really, my my phone only has FHD and 4K as an option and that is fine as well. 

 

The sensors have certain pixel numbers and the binning of data only makes sense for certain resolutions. And the TV you watch a  video on is FHD, or 4K. So no point in using those other resolutions. Your pictures are 4K resolution. If you used some 50 pixels more, quality would be worse since the there needs to be interpolation etc. to display on a 4K display. 

 

My older phones had more resolution settings. But then you wonder all the time if you didn't select the optimum setting. And too low resolutions look bad, so no point to allow them nowadays.

The point is that I am not getting the full resolution when I choose the simplified maximum resolution settings. Likely because it's set to 16:9 but I just found a google support forum post where it shows where the aspect ratio can be changed so that will solve it.
