Dell R210 Server Help!

Other details Hello! I purchased a Dell R210 server recently and I am trying to get it set up. I am looking for some help with that. I purchased 2 HDDS, an 8TB and 12TB, everything else was included with the server.

Straight from Dell, these are the only OS' that will run on this machine, I'm wondering which one to use, preferably a free one if there is one. My end goal is to set up a jellyfin media server, not really trusting in plex as of now.
