You can just re-enter the command with the efi part and it should install it again, no undoing anything required. 

I was installing arch linux just fine but when I came to install the GRUB bootloader I entered the command "grub-install --target=x86_64 --bootloader-id=GRUB" but forgot to add "--efi-directory=/boot/efi --removable" at the end Arch linux how do I undo this or can I just reneter the command and add the line I missed?

You can just re-enter the command with the efi part and it should install it again, no undoing anything required.
