Whats your laptop in this case? Also, specify "couple" here. Is it literal or do you have more than 2 surface hub (which is weird because that thing is huge)

ive been able to connect both surface hubs (i don't own them its a local place that i have sessions every week, one is a surface hub 2 and another is a surface hub 1)
im just wanting to be able to do touch screen on each of them at once.

the laptop is not mine but a friends, i think its a msi summit 16 with a i7 12th gen and a 3050, they all run fine with the fans getting a bit loud

You could just use extend these display function on windows, and then connect them via displayport type c. Id say to do it proper with a dock like this one from Belkin, but if you just want it to work, a standard Type C to Displayport dongle would work too. Hub 2 needs an HDMI though so keep that in mind.

everything connected fine and was working great, im just wanting a way to be able to use both touchscreens at the same time, possibly while using the mouse as well
