I've been using a new DS style controller for a month now (linked below), no issues. I was charging all my stuff with an older USB a to c cord that had been starting to fail, so I decided to modernize and switch to USB C to C for all my device charging. The first device I tried charging with the new cord and AC adaptor (linked below) was my new DS controller. When I plugged in the controller, something made a quiet, high pitched whine (I couldn't tell where it came from). I immediately unplugged the controller, and it has since been totally unresponsive. I cant even get the light to indicate its charging when I try it on the old charger (which still worked prior). I'm pretty confused and concerned now. Should I toss the AC adaptor and c to c cable? Did I get a faulty controller, or did I do something stupid and fry it? Most importantly, what do I need to check to prevent this from happening again? Thanks in advance for any help!

You need to be careful, USB C has all sorts of variations, and cable types. You plugged your controller into a charger that was capable of outputting 5V, 9V, 12V, using a cable that also was capable of that. While in theory it shouldn't happen, when you get some of this, we'll say "generic" (not brand name?) stuff, it's not always built the way it should be, and this when things happen like this. The controller likely didn't properly negotiate with the charger and it got more than 5V would be my guess.

That's sadly what I was thinking. So for the "how do I avoid this again" part, is the answer to make sure I only plug that controller into a AC adaptor that outputs exclusively 5V? Here I thought it would be so useful to have a controller that takes the same charger as my phone...

Use non PD version of power brick or Type-C to Type-C cable that doesn't support it. Basically just standard USB1 / 2 / 3 with C type connector.

The first option is safest.
