Performance, no. Temp difference, yeah, on 30 series cards it can help drop memory temps by about 20 degrees IIRC. It's a good idea if you're gonna be mining or doing something else that hammers the memory, but for just a gaming card it's not that big a deal.

You can buy the card you are looking at with cooper plates if it runs well and is tested.  As stated, it will run slightly faster and cooler than a normal card 🙂  ( replying to question from your previous thread about this )
