Looking at upgrading and also building it my self. 

So pretty new to this.

wanting to make it easy to upgrade parts later down the track as well.

using Two monitors and have keyboard and mouse and all the other stuff.

Currently have an old alienware PC

Up the RAM to 6000 MHZ, it is the sweet spot for AMD, even tho you might be able to OC 5600 MHZ TO 6000 MHZ, but why risk it, you have the budget anyway.

The SSDs are very very expensive and to me, they are very unnecessary, even a budget gen 4 SSD such as NV2 would feel the same as SN770/980 Pro in day to day/gaming use. I personally would get much cheaper SSDs such as P3 Plus for boot drive, and NV2 for mass storage. Up to you.

I would also get cheaper but still same high quality PSU, like MSI A850GF or RM850e. Hell, even the MSI A1000G is  the same price as RM850x, which makes the RM850x terrible value. FYR https://cultists.network/140/psu-tier-list/
