Games, programs or workloads that it will be used for: Genshin Impact, Valorant, maybe some Recording/Streaming and Video Editing if I'm feeling frisky, perhaps even some Blender rendering

I have a 400W PSU sitting around from a previous build, that should be good enough for this

Probably not going to buy a screen/kb/mouse for now, I have some basic stuff and am just going to upgrade that later on. Would be cool if the Games could run at a steady 120FPS at 1080p tho

You can actually get a much faster (about 5x) NVMe SSD for less then the SATA SSD that you were looking at!

Other than that this looks like a good build. you should be able to hit 120fps at 1080p high settings with ease, especially in well optimised games like valorant

the motherboard i picked actually seems to be the cheapest b450/b550 board that has wifi. if i downgraded to b450 i'd actually spend 10€ more
