Upgrading home/work PC

Hello everyone, I'm long time LTT follower but first time forum writer. I'm looking to upgrade my GPU and monitors in next 3-4 months and since techtober is coming to an end i figured i can ask for some help.

I currently have 1 year old 5900x on x570 and 64gb ram (my old 4790k platform died last year and i got this) with GTX970, range of storage drives from 3hdds (2 mirrored) to m.2s gen 3 and gen 4 and CM v1000 psu

1. Budget & Location

2200-3000 euro - Austria/Hungary

2. Aim

I need GPU and monitor upgrade for my work/gaming pc. I used to work as game dev, and i still do some Unity/Unreal work in spare time. I usually have multiple Visual Studio/Android Studio/intellij projects open, and not rarely few android simulators/desktop apps/servers with micro services and dozen other small apps. As for games i play or want to play wide variety of titles, starting with World of Warcraft, Dota2, Rust to Cyberpunk, Elden Ring, God of War, Forza, RDR2. And everything in between. My aim is upgrade now and not bother upgrading in next 3-4 years.

3. Monitors

I have 2 1440p 144hz 27'' monitors and want to get one more either ultrawide 1440 or normal 4k.

4. Peripherals

i already have everything from misc category including Windows.

5. Why are you upgrading?

GTX970 is real struggle especially with 1440p

My guess is i can get 4090 for 2.2k and then monitor for 800 and call it a day, but i'm afraid i'll be botlenecked by 5900x. if so, maybe 4080 for 1.5k and again monitor for 700-800 and save some money. The real question is how high i should go with GPU until my CPU becomes problem. or should i try to sell 5900x and get 5950x3d. or something else...
