Tbh, none of their stuff is necessary while using a headset mic. Since the mic is right up front your mouth in that case, you can't easily mess things up. All Discord's methods of suppressing, adjusting etc ends up doing nothing much else than messing up your experience. You can test this for yourself - turn off the settings one by one, do a test up above that settings page to hear your own self. Turn them on and do again... it's like Discord by default puts a noise gate to your mic that is overly aggressive set up. Just cuts a significant portion of your gain / volume. 

I've tested this with various high end mics, none of those settings actually helped. 

As for the input sensitivity, it's a setting you can adjust if you want. It's the amount of noise in decibels that Discord starts to record your volume. When it drops down below a certain threshold, your voice is no longer heard. It's set to auto by default, though I'd suggest using push to talk if you could. That way, you make sure your voice always goes to the other client without skips due to sensitivity settings. You're also eliminating other unwanted noises to get to the other side by using push to talk. I just set push to talk on my mouse side button so things get easier that way.

I recently bought an antlion modmic wireless, but I am having a lot of trouble because there is no built in audio monitoring and windows built in options are horrible and have latency. The headphones I use are hyperx cloud alphas and they are sorta noise canceling so when I talk I can't hear myself and I really dislike that. What sort of options do I have to get some sort of feedback from my mic to my headset. I'm not against buying a new headset, maybe some sort of preamp system, software. I don't really know. Best bet might be to get open back headphones. What do you guys think?

It is wireless but it has a USB dongle. Does that change anything?

the usb doggle is a bluetooth dongle so no. youd have to get a wireless mic that outputs in 3.5mm, quarter inch or xlr if you realy want low latency playback

I just went ahead and bought the epos h6pros and a gsx 300 audio card.
