Budget (including currency): $1,500 CDN

Country: Canada

Games, programs or workloads that it will be used for: NAS, Plex server, Home Assistant, possibly unify OS VM based on what I upgrade the network to further down the road.

Other details:

Already have a giga-bit switch which is more than enough for network use as there is only 3 users.

Have 5xHDDs already as I'm currently using my gaming rig to host Plex Media Server and as a windows file share for backing up laptop.

32Gb DDR4 2666Mhz CL16 ram

I'm looking for something that is more expandable for future use i.e. as the plex server grows and home automation becomes more involved plus data back-up with 7 year retention requirement size would become an issue.  I have experience working with different server configs etc so am comfortable building one myself as I would love not to pay the costs for pre-built systems

Was thinking along the lines of this:

Is there a reason for an iGPU equipped CPU and a discrete GPU?

I prefer the discreet gpu, however I can't remember the specifics for performance on the ryzen processors atm and have to look into the functionality.  Also originally had a different case that didn't have room for gpu + hdd bays

Consider an Intel build. Much better performance for similar cost.

A small NVMe drive would speed up booting.

The Corsair HX 750 is an excellent PSU and currently well priced.

A 2x32GB memory kit is less expensive and allows for a no replacement memory upgrade.

Consider the Meshify 2 XL case for its much better airflow.

80+ ratings certify electrical efficiency. Not quality.
