Is it better/faster/less ping if I took Intetnet via Ethernet cable directly from the router or from a wifi extender?

Yes direct from a router to your PC? Yes but it won't improve internet speed maybe a more stable internet

So it’ll probably won’t always be stable if I used the extender right

You can use an Ethernet cable from the wifi extender and it will only be fast as your wireless speeds can go up to. It should be stable.

Not if the extender is connected to the main router via WiFi, it can still suffer the same stability problems.  Granted, less likely than if you're connecting to the extender over WiFi, but connected over cable to the router is the only guaranteed stable connection.

Router:  Intel N100 (pfSense) WiFi6: Zyxel NWA210AX (1.7Gbit peak at 160Mhz)
WiFi5: Ubiquiti NanoHD OpenWRT (~500Mbit at 80Mhz) Switches: Netgear MS510TXUP, MS510TXPP, GS110EMX
ISPs: Zen Full Fibre 900 (~930Mbit down, 115Mbit up) + Three 5G (~800Mbit down, 115Mbit up)
Upgrading Laptop/Desktop CNVIo WiFi 5 cards to PCIe WiFi6e/7
