Best way to convert Windows install from RAID to AHCI and move it to a single SSD at the same time?

That title is a little confusing, so let me explain.

 

Right now, I have windows installed on two SSDs in RAID 0 on an AMD motherboard. I want to move my windows installation to a single NVME SSD, which will also require me to switch to AHCI most likely. My question is what is the best way to do this. I have two ideas, so I'll go ahead and list them.

 

1. set up the powershell command to change from RAID to AHCI in windows, then image my windows install over, then go about the process normally.

2. Image windows to a new disk, boot into the single disk that is set up in RAID, then run the commands to move it to AHCI.

 

I'm not sure how AMD RAID will play with the transfer since it required me to upload drivers during the installation of windows, and I don't know what those drivers will do once I disable raid or move to a storage device that isn't in a RAID array. Thanks for the help!
