Edit: price can be +-$500
Budget (including currency):
 $2000 usd (pc only)

Country: USA

Games, programs or workloads that it will be used for: Heavily modded games like 7days, terraria, Minecraft, factorio, and FPS. High settings in non FPS preferably. Occasionally using creator apps like photoshop and video editing.

Other details (existing parts lists, whether any peripherals are needed, what you're upgrading from, when you're going to buy, what resolution and refresh rate you want to play at, etc):

I currently have a Gigabyte p57xv7 laptop( gtx 1070 and i7 7700HQ), and am planning to get a desktop. I want at least two monitors (1440p, 120+ refresh, HDR if possible and if its worth it).

GPU: 3060ti or 3070

CPU: intel or amd doesn't matter, but I might wait to see how good intel 12th gen are.
Memory: 32 GB or ram around 3200. My current laptop has a single 16gb stick, and i find that to not be enough with how i use my computer (who closes tabs anyways?), so I'm getting two 16 sticks.
storage: at least nvme 1tb ssd gen 4, and 1tb+ hdd.
IO: Doesn't matter too much.

I want to build one from scratch myself, but finding a reasonably priced gpu is a pain. If anyone has any tips let me know. If not, I found some prebuilt on sale at microcenter, but if there are other recommendations I'm open. Is the computer with the 3070 worth the extra $300? BTW, I saw an old review talking about the cooling, is that an easy fix?

The best bet I could see is 1 of 2 things.  Depending on how badly u need to upgrade now . Option 1 get a nzxt prebuild or nzxt build it you self kit if u are interested to build you own pc. From what I saw it comes with everything to start building your pc. Option number 2 u would have to Stalk every online shop to get a card at msrp (the down side is u don't have luxury of choosing brand or a model.  To give an example.  It took me around 2 month to buy a card . checking when ever I can that might be 4 times an hour daily I was planning to buy a 3080  . But ended buy a 3080 ti from a brand I never used before.  On the plus side I got a 3080ti cheaper than a scalped 3080 but I placed my order 4:30 am . So in my opinion if u need upgrade now nxzt bld is your best option and cheapest as they charge 99$

You surely aren't serious, are you?

Anyway, prebuilts. You might save on the graphics card but usually have to spend more getting a better motherboard (it simply says "B550"), case and power supply (again, it only says "750 Watt" without getting into detail).

Graphics cards prices are terrible (thanks, scalpers) but imo going with those asus prebuilts is a bit risky.

getting nVME storage to play games and casually run photoshop is simply wasting money

And remember:

What u don't know is nzxt bld uses off the shelf components and u do have option to choose type and vendor of almost every item and u know the brand of every product..
