Short version, I have 2 27" monitors. I'm thinking of getting a 3rd one that is ultra wide to smack into the middle of them What size do I need? 

 I want a curved Ultra wide as I really enjoy my space sims and my racing games, it'll help give me a wider fov and reduce how much bezel there is. With the 2 27" I have I want to keep the vertical dimension the same or at least as close as possible. Is there a general rule for size, can this actually work, would I need 4 outputs from my GFX card to push all 3 if I do this, How bad would this impact performance on a system running GTX 2080 with a Ryzen 5 5600x?
Any help is appreciated. If y'all run this type of setup feel free to post some pics and show off.

Ultrawide only needs 1 cable even on the humongous kind because display size does not affect bandwith requirement, resolution does. But overall, 3 display and a 2080, as long as you dont go mad with the game settings it should be above 60fps (which imo is necessary in racing games)

A 34" 21:9 ultrawide (3440x1440) will be the exact same height (within a couple millimeters) and vertical resolution as a 27" 1440p monitor. I'm running 34" + 27", both curved 1500R, and currently thinking about getting another 27" for the other side, so I'd end up with the same setup you're going for. 

 

Or you could go for one of those 49" super-ultrawide 32:9 that's basically 2 27" next to each other as a single screen
