Keep in mind that this means your current osx install WILL have to be redone. I'm looking into some boards that work well right now but the problem here is your 1080ti. All the boards that supported osx DO NOT support a low enough version where the 1080ti still works and vice versa.

Deep learning... On a hackintosh?

If  you use anything modern, you won't have any nvidia support, and amd is a no go for such tasks.
