Hey, i was wondering if it matters to replace my psu without changing the cables.

I currently have a EVGA SuperNOVA 650 GS (V2) and would like to replace it for a 850watt model.

I have seen on internet that you should not replace EVGA for other brand because the cables might be different.
but would it matter if i change my current EVGA for a new EVGA like the EVGA SuperNOVA 850 G3.

This is true as the pinout in each end of the power supply may slightly differ.

I would still advice changing the power cables with the power supply unit as one whole piece. The 850W unit is going to come with its own cables so its not a cost perspective of why you should not use them.  It would be stupid to use the cables from your current rig and the pinouts are different and you send 12V on a ground wire...

its not so much about the cost, its more about that this case is so thight with cable management. its not so easy to change the cables.
Thats why i was asking it

That's why I was asking.

I kinda figured it was something along the lines with getting the cables in on the back. Is it a glass back panel?? I'd just shove the back panel on if it was metal like I do with my case, although its somewhat cable managed in the back.

You can only do that if the cables are 110% compatible and interchangeable and this is often not the case. Yours are NOT COMPATIBLE with each other and WILL result in damaged or dead parts if attempted.
