I decided to build my first PC rather than getting a PS5, so I'm aiming for a mix of 1080p gaming and potentially also hooking it up to a 4k tv. How does the build below look for that?

Have you looked into the 5600x CPU?  Might be a better use of money right now.  

Seems like your build is a little CPU heavy, and the 5600x and 10700k are roughly tied in single core performance.  As of 2021, going above 6 cores really doesnt add much, if any gaming performance.  

I suspect you can get the exact same FPS in most games, while saving 100 pounds by going AMD, but I'm trying to convert currencies in my head here.
