Does anyone have a recommendation for a 3rd gen ryzen cpu and RAM I've picked the mobo and I'm looking for CPU and RAM recommendations.

The 3600 is probably the way to go, but without that information it's hard to recommend anything specifically.

I'm buying part by part over time so I can split up my purchasing, I would be using it for gaming and a little bit of streaming, I'd say my budget is in the $750-$1000 range (USD)

By third gen you mean Zen 3? Not Ryzen 3000? These things are confusing...

I'd be using it for Minecraft, Destiny, Forza Horizon 4 and the odd stream

I already have a keyboard, mouse and monitor at 1920x1080 (60 Hz) that is hooked up to a really old first gen mobile Core i5 laptop and I already have a case and motherboard on the way (b550 chipset)

I would recommend going for a Ryzen 5 3600 its only $199 on amazon and is amazing for gaming, streaming, etc plus that quad core processor listed up there will most definitely bottleneck the 1070 and 1080 in some heavy CPU titles so please do not go in that direction especially considering that the 3600 is so much better for only 10 bucks more AND its future-proof because it can handle GPUs like the 3070 which are really high-end. I would also recommend going for Corsair Vengeance RAM (3200mhz 2x8gb) because its higher quality and close to the same price (10-20 dollar difference). I don't know much about the SSD but the HDD looks pretty good (for a budget drive). Also go for an rtx 2060 instead of a used 1070, it provides better performance for a small cost (Only like 20-30 bucks more) and it offers RTX raytracing support.
