SSD+HDD help ?

Maybe im just stupid and this is all just fairy dust at the moment as dont have the money to finish off my build.But if i use a SSD for the OS does this mean that my documents and so on will be on the SSD ? or can i change it so it uses the HDD ? sorry for my noobieness of knowledge any help would be nice.
I would be buying a 3tb HDD and 120Gb SSD


EDIT: after poking around the laptop im useing at the moment found out i can set the locations of documents,music,video,picutres if i just right pressed and whent to propertys.

I would opt to get a 250GB+ size SSD with a 1TB hard drive. You can later on add a second one
