Are 3 or 4 Graphics Cards even still supported?

I'm not actually planning on doing this, more just curious though. I know that SLI only supports up to 2 graphics cards, but can applications like video editing or CAD actually utilize more than 2 GPUs?

So could someone technically get 4 GPUs, run 2 in SLI when playing games that support it, and then when doing multi-GPU productivity based workloads they could utilize all 3 or 4?
