The new consoles are coming up with HDMI 2.1 and my current monitor has a HDMI 1.4 port.

So I was wondering if there are any adaptors currently available to convert 1.4 to 2.0(If that’s even possible.)

I know i said “convert to 2.0” but I just wanna make sure if there are adapters.

Its the Monitor itself that determins the HDMI Version, the xbox will support 2.1, doesnt mean you have to use it, you can still use your old TV/Monitor.

I know but I don’t just want 4k at 30hz. I want the full 120hz.

If 4k 30Hz is all your monitor can do then thats all it can do, you would need to uprade if you are using HDMI... there arent adapters to make your TV better than it is

Oh ok, sorry for that. Would displayport to hdmi work?

DP to HDMI is bi-directional, make sure you're getting HDMI input to DP output (assuming DP on the monitor).

Yes, it would work, assuming the DP port on your monitor supports 4k 120Hz.
