New Home help needed

Need recommendation on what to buy. Currently there are 11 ethernet points in a box, 3 of those that feed locations for wireless ap's in the ceiling. The ISP will be providing the modem. The ceiling AP's would need to be POE as there are no power connections. All help is greatly appreciated.

You're being fairly vague here. What exactly do you want? You have given us no budget, floor plan, wall material, or current hardware.

Details: 12GB ram, GTX 1080, USB card passed through to windows 10 VM. VM's OS drive is the SATA SSD. Rest of resources are for Plex, Duplicati, Spaghettidetective, Nextcloud, and game servers.

Just looking for recommendations. the house is 3500 sqft. open floor plan. Not sure what I really need either. internet speed from isp is only 300mbps. Just want wifi and wired connection to tv's and office.  Wifi is for phones, tablets and a few smart things. printer, Arlo cameras, and thermostat. figured this to only be about 500 or so.

Wall material is all sheetrock inside house and block exterior. No current hardware.. House is 1 month from completion

I would use UNIFI Access Points (probably 1 or 2 AP-AC-LR) you could put one in the center of the house. And for router, you could use any router
