My current rig(very over kill):

i5-9600k oc to 5.1ghz on all cores

corsair h115i
asus strix z390-H

32gb of corsair vengeance pro rgb 3000 cas 16

evga xc ultra rtx 2070 super

dual 1tb samsung evo NVMe ssds in raid 0

Rgb strips & case fans. 
Nzxt h500 case.

650 watt psu

what would the next upgrade path for the build be? Or should I start saving for a new rig for the next gen gpus?

Your CPU is okay for now but I would save money for 8 core i9 9900k series if you like multi tasking but I doubt you will. GPU is fine. RAM is fine. Storage is fine but I don't like raid setup because if one drive fail, you will lose all data. Case is good. PSU is good for any single GPU.

Saving is almost never bad.

If gaming is your main thing then I don't see any point in upgrading anything at this stage. Wait a couple of years a least till things take a big leap forward.
