Transferring Boot Drive

I was looking to upgrade my computer to have more storage, but still want to keep the speeds of m.2. Since mt motherboard only has one m.2 slot, I figured I would need to buy a cheap ssd to transfer all my data to, then replace the m.2 and transfer it over. Would this work?
