Office PC part help

I am going to be building a PC for my uncle, he will, mainly be writing emails, documents, and other office related stuff. I know a lot of the parts I choose are a bit “high end” for his use-case, but I want it to be future proofed. I will be buying all of these parts at microcenter tomorrow, and was wondering what you think of them. (We are at the Minnesota microcenter) Budget is $500

My main PC (Hybrid Windows 10/Arch Linux):

OS: Arch Linux w/ XFCE DE (VFIO-Patched Kernel) as host OS, windows 10 as guest

CPU: Ryzen 9 3900X w/PBO on (6c 12t for host, 6c 12t for guest)

Details: 12GB ram, GTX 1080, USB card passed through to windows 10 VM. VM's OS drive is the SATA SSD. Rest of resources are for Plex, Duplicati, Spaghettidetective, Nextcloud, and game servers.

If ITX is more useful than having the extra 2TB Hard Drive (and higher-end motherboard), then I converted Case, Motherboard, and PSU to fix ITX and dropped the 3.5" HDD:
