Microphone Level Fluctuating While Recording

My microphone's volume is all over the place and it is driving me nuts.  If I try to record a voice-over its up and down in volume while i'm speaking at the same level.  I cannot figure out what is going on here.  The Microphone functions fine when recording direct to camera but not when recording to Adobe Premiere or Adobe Audition.

I have used this configuration in the past without issue, but I have recently updated Audio Drivers (last week).

Current Configuration:

Mic: Azden SMX-15 on camera mic

Input: Front Panel 3.5mm input (I realize this isn't ideal but it is easiest with my Tower900 case.)
Audio Controller: RealTek ALC1220 on-board Gigabyte GA-AX370-Gaming K5

OS: Windows 10 Build 1809

Audio Driver: Realtek Build 1809 (Downloaded from Gigabyte)

I cannot find any settings that effect this.  I go through the Windows Sound settings to dial in my Audio levels, then I'll be recording for a few seconds, suddenly  my audio is 10 decibels quieter, then suddenly it is back up where I want it.  It is like something is trying to Normalize volume, or reduce background noise and overdoing it.  However I cannot find any program that is or should be doing this.  For some reason this version of the Realtek drivers doesn't seem to have it's own control panel.

I am going to record to my Zoom recorder to get through this, but I would really like to record directly to my computer and save the trouble.

Uncheck any Automatic Gain Control (AGC) and also disable "Allow applications to take control of this device" and see if that makes a difference.

Both should be found in your sound properties for the mic.
