Phone camera apps

Just seen the video in which Linus changes OS on the pocophone (https://www.youtube.com/watch?v=BsHtfLh6azw)

One thing that stuck out to me is the difference Google camera made to the quality of the photos. Is it possible to put google camera on to a phone without changing the OS and if so what would be required to do so (rooting etc.)? Or alternatively, is there any apps that are as good as Google camera that can be more easily installed?
