Building a system to duel but osx and Linux (kinda)

I recently watched an ltt video

and I'm trying to build a system to boot osx through a Linux virtual machine.

 

Iam looking to do a Ryzen system maybe a 2700x and was wondering what GPUs to pair with it if anyone had any suggestions. 

 

I'm a programmer and will only really be doing X code and swift sort of stuff possibly some web based stuff.
