I ended up making a run to Microcenter and got this bad boy
Gigabit with 10-Gigabit/Multi-Gigabit - GS110MX (netgear.com)
and it just works, going to try to maximize this speed. I think my bottleneck is on the level-2 cache on my primocache drive.

TL;DR I have and old 1U server case and want to turn it into a machine to stream to twitch and host a minecraft server. Need to have ability for console input and budget is 400.
I just built what I intended on being a gaming PC for my son and it handles everything we throw at it.
AMD Ryzen 5 2600 OC'd to 4.0
MSI 350 Gaming Pro
480 GB M.2 SSD
2 Seagate 1TB HDD in Raid 0
XFX Radeon 570 8GB
2x8 GB 2666 Ram OC'd to 3000
This machine runs AAA games much better than I had planned, and now I've gotten back into gaming in a way that I didn't expect. I've even begun to start editing videos and streaming CS:GO matches and Minecraft builds. I'd like to take an old 1U server and turn it into a streaming pc and host a minecraft server. Any help would be appreciated. I'd prefer to have dual cpu unit with at least 8 cores and seeing the prices of all the enterprise hardware that floats around the internet that's two to three generations old it looks like I could do this pretty cheaply.
