    looking at the hardware you got a 350w will be more than fine, but psus that low on wattage usually do not come with an 80+ certification, wich always worries me... i suggest buying a psu that has an 80+ certification, bronze if possible, the wattage you need is pretty low, so the lowest wattage you can find with an 80+ certification would be the best for you.

    as far as i know the 980 does not have an 8gb variance, the best 980 you can get is the 980ti and it has 6gb of vram, but... vram shouldnt be an issue anyway, so if you can get your hands on a 980-980ti itll be definitely better than a 1060

    both those cards will rock those 3 monitors no problem, but with the 1080ti youll get a BIG boost in performance, although id reccomend a 1440p ultrawide high refresh rate monitor
