My old Mac Mini with an i5 dual core could handle a small minecraft server, so an i7 2600 should be plenty.

That build you posted is overkill for a 5 player MC server. I recommend looking for a solution with a lower power consumption if you're going to be running it 24x7.

 

Honestly if I were you, I'd pick up a VPS in a real data center for $2 per month and host the MC server on that and save yourself some money as well as have much better connectivity and uptime.

I have a server running on a 3rd gen i5 with 8gb of RAM and it does fine for 1-5 players (that's the most I ever have). An i7 will be great for running an MC server. But why three?

Well, I would go ahead and buy the computer anyway. It will be great for your MC server, but in regards to running three simultaneously, I would stay away from doing that. The 8gb of RAM you have will be fine for one server, but more than one might be tricky.

 

Have you tried to run three servers at the same time on one computer before? I'm not sure how that would work with the IP address and port forwarding for one instance of Windows. I'm pretty sure that the professional hosting services use virtual machines so people can have various servers on one computer. Using three virtual machines on 8gb of RAM would be hell.

 

It would be easy enough to stop the server you were playing on and start up a different server that has different world and save files. Same IP, different save file / map.

Yes, I'm doing it right now and surprisingly isn't that bad but I'm just looking for something dedicated so I'm not putting a constant load on my main rig.

I'm sure you'll be fine. If it doesn't work with all three at the same time, just do what I suggested. 2600 is a great CPU.
