Right now I have a i7 6700k and will be uping to the 9700k or 9900k. I am curious if I buy a z390 will it work for my i7 6700k until the 9700k/9900k come back into stock?

No. LGA 1151-v2 motherboards aren't backwards compatible with LGA 1151-v1 CPUs, or vice versa
