Ethernet... Dongle?

So i bought a laptop, it doesnt have a ethernet port, but whats the diffrence between a TB3 and USB 3.0/1 adapter

Both interfaces have enough bandwidth for gigabit Ethernet. It's going to come down to the individual chipset for things like latency, featureset and driver support.

 

If you need a 10 Gbps dongle, then TB3 is going to be the only (rather expensive) option.

 

For general use I'd just get the cheapest possible one...

For gigabit there isn't really any difference between the data rates you'll get but go with USB3.0/3.1 if you can since that can work in the TB port (if you get it with the same style connector)
