I am in the process of putting together a home server build and i have been advised that FreeNas is one of the best operating systems to use when using ZFS which is the file system that i plan to use, i have also been advised that i should use an enterprise level ssd to run the OS on, will it matter a great deal if i use a commercial one instead, if so what will the differences be?

you don't need an SSD for the OS, you can run it from a USB stick, that is what I watch in same videos for FreeNas. The SSD is for caching

Will any old ssd work for caching?

Short answer yes, long answer yes but it depends from your use case. An MLC SSD will be a bit faster and will last for longer, it's about durability and not compatibility. What is your use case? reads/writes per day?
