For every day use that seems good, except you mention "gaming", so unless you play really light games I'd also get a used graphics card and put it in there. And maybe a 120gb SSD to put your OS on.

Specs: CPU: AMD Ryzen R7 3700X @4.4Ghz, GPU: Gigabyte RX 5700 XT, RAM: 32 GB (2x 8GB Trident Z Royal + 2x 8GB TForce Vulkan Z) @3000Mhz, Motherboard: ASRock B550m Steel Legend, Storage: 1x WD Black 1Tb NVMe (boot) + 1x Samsung 860 QVO 1Tb SSD (storage), Case: Thermaltake Core V21, Cooler: Noctua NH-D15

I completely agree

Once the next gen of nvidia graphicscards come out there will be plenty of good cheap used cards

Good luck finding some!

if you are planning on throwing a GPU in a stock box check the PSU first most of them don't give you more than the system needs and don't give you a 6 or 8 pin to power for anything more than a 75 watt card like the 1050ti which is more than capable in 1080p gaming I have a cranked up one in my dell OptiPlex it does 60-75FPS no issues. sometimes you can throw another psu in others you need adapters.
