Currently, I have 2 monitors, one running at 1920x1080 and the other running at 1400x900. When trying to connect the 3rd monitor all my screens go blank until I unplug the monitor. My GPU is a GTX 1060 6gb and my CPU is an i5-8600k. Neither of them is overclocked so system instability doesn't seem to be the culprit. Please help!

AFAIK you can only use 2x HDMI or 1x HDMI + 1x DVI.  The third has to be displayport or it needs an active displayport adapter of some kind.

I am using 1x HDMI and 2x DVI... If the third needs to be display port, would a DP to DVI-D cable do the trick?

That limitation is specific to old AMD cards, NVIDIA cards have never had that type of limitation. In addition, it doesn't cause the other displays to stop working. The issue is something else.

Which cards? Fermi cards do not support more than 2 displays period (regardless of whether you use DP or not), and Kepler and above will support up to 4 displays through any combination, which I have tested personally. Pascal cards like the 1060 certainly don't require DisplayPort for more than 2 displays, I'm running 3 monitors from DVI/HDMI on my GTX 1080 right now, and it works with a 4th.
